  • 250ml (1 cup) double/heavy cream
  • 3 tbsp butter, melted
  • 3 tbsp flour
  • 30g (1 cup) fresh spinach (optional)

Step-by-Step Instructions:

1️⃣ Sauté the Veggies – Melt butter in a large pot over low heat. Add celery, carrots, and onion; cook 5–7 minutes until softened. Stir in garlic and thyme, cooking for another 30 seconds for extra flavor .

2️⃣ Build the Base – Pour in chicken stock, add bay leaf, a pinch of salt and pepper, chicken breasts, and wild rice. Bring to a boil, then reduce heat to a gentle simmer for 45 minutes or until rice is tender.

3️⃣ Shred the Chicken – Remove chicken breasts, shred with two forks, and return to the pot along with the heavy cream.
