  • ½ cup diced onions
  • ¼ cup diced sun-dried tomatoes
  • 3 cloves garlic, minced

Ingredients: Creamy Marry Me Tuscan Chicken Soup: RecipeCozy, Delicious and Easy to Make

  • 1 teaspoon olive oil
  • 1 to 1 ½ pounds boneless, skinless chicken thighs (diced into 1-inch pieces)
  • 2 teaspoons Italian seasoning, divided
  • Salt and pepper, to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves, minced
  • ¼ cup flour
  • 2 tablespoons tomato paste (optional, for a richer tomato flavor)
  • 6 to 8 cups chicken broth (start with 6 cups for thicker soup)
  • 6 oz small shell pasta
  • 1 cup heavy whipping cream
  • ½ to 1 cup grated Parmesan Reggiano cheese
  • 2 ½ to 3 cups fresh spinach

Step-by-Step Instructions

  • Heat olive oil in a large soup pot or Dutch oven over medium-high heat. Add diced chicken, 1 teaspoon Italian seasoning, salt, and pepper. Cook until browned on all sides (about 4-5 minutes).
  • Add onions, carrots, celery, sundried tomatoes, and garlic to the pot. Cook until translucent (3-4 minutes).
  • Sprinkle flour evenly over the vegetables and chicken, stirring to coat. Add tomato paste now if using, and stir to combine.
  • Gradually whisk in chicken broth to avoid lumps, scraping the bottom of the pot to deglaze.
  • Bring the soup to a boil, add pasta, remaining Italian seasoning, salt, and pepper. Cover and simmer on low heat for 20 minutes or until chicken is cooked and pasta is al dente (or boil pasta separately and add at the end).
  • Stir in heavy cream, fresh spinach, and Parmesan cheese. Simmer for 5 more minutes until the spinach wilts.
  • Taste and adjust seasoning as desired.

Storage, Freezing, and Reheating

  • Store leftovers in an airtight container in the fridge up to 3-4 days.
  • Reheat gently on the stove; add extra broth or water to thin if the soup thickened.
  • Pasta may soften after refrigeration; to avoid mushy pasta, cook separately and add when reheating.
  • Can be frozen without pasta; add fresh pasta when ready to serve.

Serving Suggestions and Garnishes

  • Garnish with extra grated Parmesan or fresh basil.
  • Serve with crusty bread or garlic bread for dipping.
  • Pair with a crisp green salad for a complete meal.

Optional Variations

  • Use half-and-half, milk, or coconut milk instead of heavy cream for lighter texture (will be less thick).
  • Add red pepper flakes for a spicy kick.
  • Omit tomato paste for a purely creamy soup without tomato undertones.
  • Slow cooker adaptation: Cook all ingredients except pasta, cream, spinach, and cheese on low 8 hours or high 4 hours. Add remaining ingredients at the end.

Cultural Note

This Tuscan-inspired soup brings together classic Italian flavors sundried tomatoes, Parmesan, and Italian seasoning with creamy comfort, making it perfect for modern American home kitchens. It’s a fusion of rustic Tuscan cuisine with the ease of weeknight cooking.
