How to Make Easy Creamy Lasagna Soup

Step 1: Sauté the aromatics
Heat the olive oil in a large pot or Dutch oven. Add onion and cook until soft and fragrant.

Step 2: Brown the beef
Add the ground beef and cook until fully browned. Stir in garlic, red pepper flakes, oregano, and 1 teaspoon salt. Mix in tomato paste until well combined.

Step 3: Build the soup base
Pour in tomato pasta sauce, diced tomatoes, and chicken broth. Bring mixture to a boil.

Step 4: Add noodles
Stir in the broken lasagna noodles. Lower heat and let simmer until noodles are tender (about 12-14 minutes). Add remaining salt to taste.

Step 5: Stir in cream

Step 6: Garnish and serve
Ladle into bowls and top generously with mozzarella, parmesan, ricotta, and fresh basil. Enjoy immediately!

Practical Tips for Making Lasagna Soup

  • Use dried lasagna noodles, not oven-ready. Oven-ready noodles tend to get too mushy in soup.
  • For extra cheesy flavor, stir in a handful of mozzarella directly into the soup before serving.
  • Want a lighter version? Use ground chicken instead of beef and swap heavy cream for half-and-half.
  • Freeze leftovers without the cream and cheese, then add fresh dairy when reheating.

Bonus Ideas

  • Add extra veggies like spinach, bell peppers, or zucchini for a nutrient boost.
  • Make it spicy with more red pepper flakes or even a dash of hot sauce.
  • Turn it into a “Lasagna Casserole Soup” by baking it in a casserole dish with a thick layer of melted cheese on top.
